Salmon in Phyllo

For 4 servings:

4 boneless skinless salmon filets (5 oz each)

4 tablespoons melted butter, cooled

4 ounce frozen spinach

4 mushrooms

1/4 onion, diced

1 tablespoon vegetable oil

4 sheets phyllo dough

INSTRUCTIONS

  1. Sautee onions and mushrooms in oil until cooked through, then add spinach to heat up. Set aside to cool.

  2. Prepare 1 sheet of phyllo for each salmon filet. Brush full sheet with melted butter. On the side of phyllo dough closest to you, put 1/4 of the spinach mixture down, then add the salmon filet, skin side up. Fold in sides and roll up.

  3. Brush the top with butter.

  4. Line baking sheet with parchment paper. Bake at 350 degrees for approximately 20 minutes, until the dough is golden.
